Amy’s Oven Roasted Tomatoes Recipe
Preheat oven to 400 degrees
Line a baking sheet with parchment paper
Wash and slice one pound of tomatoes on the vine, or tomatoes of choice. Preferably tomatoes that will fill up the diameter of a sandwich.
Slice thin for crispier tomatoes, thicker for softer tomatoes.
In a medium bowl, combine about 1/4 cup of olive oil with 1tsp-1tbsp dried basil, thyme and garlic powder. Fresh herbs can be used as well.
Add a few grinds of fresh ground pepper if desired.
Coat tomatoes in the oil herb mixture and arrange on the baking sheet.
Sprinkle over top with kosher salt
Bake in oven for 25-30 minutes. Check tomatoes at 25 minutes, and bake longer according to your desired doneness.
These tomatoes are the perfect addition to burgers, sandwiches, salads, or simply a scrumptious snack any time.
